- Basmati rice - 150 grams
- Chicken breast - 200 grams
- Vegetable oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Chicken broth - 300 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
- Cut the chicken breast into small cubes and add it to the skillet. Cook until the chicken is lightly browned, about 5-7 minutes.
- Stir in the ground cumin, ground coriander, ground cinnamon, salt, and black pepper. Mix well to coat the chicken and vegetables with the spices.
- Drain the soaked rice and add it to the skillet, stirring to combine with the chicken and vegetables.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the skillet from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
- Serve the Riz bil Bzar topped with toasted pine nuts and chopped fresh parsley.
