Ingredients

  • Basmati rice - 150 grams
  • Chicken breast - 200 grams
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Chicken broth - 300 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
  4. Cut the chicken breast into small cubes and add it to the skillet. Cook until the chicken is lightly browned, about 5-7 minutes.
  5. Stir in the ground cumin, ground coriander, ground cinnamon, salt, and black pepper. Mix well to coat the chicken and vegetables with the spices.
  6. Drain the soaked rice and add it to the skillet, stirring to combine with the chicken and vegetables.
  7. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove the skillet from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  9. Serve the Riz bil Bzar topped with toasted pine nuts and chopped fresh parsley.
