Ingredients

  • Basmati rice - 150 grams
  • Fresh okra - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced tomato, cumin, coriander, turmeric, salt, and black pepper. Cook for about 3 minutes until the tomatoes soften.
  5. Add the fresh okra to the skillet and stir gently to combine. Cook for another 5 minutes, allowing the okra to become tender.
  6. Drain the soaked rice and add it to the skillet, stirring to mix with the okra and spices.
  7. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  8. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, then drizzle with lemon juice.
  9. Serve hot, garnished with fresh parsley.
