Ingredients
- Basmati rice - 100 grams
- Brown lentils - 100 grams
- Zucchini - 1 medium (approximately 200 grams)
- Onion - 1 small (approximately 70 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish (optional)
Steps
- Rinse the brown lentils under cold water and soak them in water for 30 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, cinnamon, salt, and black pepper to the onions, stirring for about 1 minute until fragrant.
- Drain the soaked lentils and add them to the saucepan. Pour in 500 milliliters of water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes.
- While the lentils are cooking, rinse the basmati rice under cold water until the water runs clear. Set aside.
- After 15 minutes, add the zucchini (cut into half-moon slices) and the rinsed basmati rice to the lentils, stirring to combine.
- Cover the saucepan again and cook on low heat for an additional 15 minutes or until the rice and lentils are tender and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Serve warm, garnished with fresh parsley if desired.
