Ingredients

  • Basmati rice - 100 grams
  • Brown lentils - 100 grams
  • Zucchini - 1 medium (approximately 200 grams)
  • Onion - 1 small (approximately 70 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - for garnish (optional)

Steps

  1. Rinse the brown lentils under cold water and soak them in water for 30 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, cinnamon, salt, and black pepper to the onions, stirring for about 1 minute until fragrant.
  4. Drain the soaked lentils and add them to the saucepan. Pour in 500 milliliters of water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes.
  5. While the lentils are cooking, rinse the basmati rice under cold water until the water runs clear. Set aside.
  6. After 15 minutes, add the zucchini (cut into half-moon slices) and the rinsed basmati rice to the lentils, stirring to combine.
  7. Cover the saucepan again and cook on low heat for an additional 15 minutes or until the rice and lentils are tender and the water is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  9. Serve warm, garnished with fresh parsley if desired.
