Ingredients
- Basmati rice - 150 grams
- Brown lentils - 100 grams
- Chicken thighs - 250 grams, boneless and skinless
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken broth - 500 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, cinnamon, salt, and black pepper to the onions, cooking for another minute until fragrant.
- Add the chicken thighs to the pot and sear them for about 3-4 minutes on each side until lightly browned.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 15 minutes until the chicken is cooked through.
- While the chicken is cooking, in a separate pot, bring 400 milliliters of water to a boil and add the rinsed lentils. Cook for about 20 minutes until tender, then drain.
- Once the chicken is done, remove it from the pot and set aside. Add the soaked and drained basmati rice to the pot with the broth and spices. Stir well.
- Place the chicken thighs back on top of the rice, cover, and reduce the heat to low. Cook for an additional 15-20 minutes until the rice is fluffy and the liquid is absorbed.
- Once cooked, gently fluff the rice and lentils together, and serve garnished with freshly chopped parsley.
