Ingredients

  • Basmati rice - 150 grams
  • Brown lentils - 100 grams
  • Chicken thighs - 250 grams, boneless and skinless
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken broth - 500 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, cinnamon, salt, and black pepper to the onions, cooking for another minute until fragrant.
  4. Add the chicken thighs to the pot and sear them for about 3-4 minutes on each side until lightly browned.
  5. Pour in the chicken broth and bring to a simmer. Cover and cook for 15 minutes until the chicken is cooked through.
  6. While the chicken is cooking, in a separate pot, bring 400 milliliters of water to a boil and add the rinsed lentils. Cook for about 20 minutes until tender, then drain.
  7. Once the chicken is done, remove it from the pot and set aside. Add the soaked and drained basmati rice to the pot with the broth and spices. Stir well.
  8. Place the chicken thighs back on top of the rice, cover, and reduce the heat to low. Cook for an additional 15-20 minutes until the rice is fluffy and the liquid is absorbed.
  9. Once cooked, gently fluff the rice and lentils together, and serve garnished with freshly chopped parsley.
