  • Green lentils - 1/2 cup
  • Ground lamb - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken broth - 2 cups
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice and green lentils under cold water until the water runs clear; set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, cinnamon, salt, and black pepper to the pot, stirring for 1 minute until fragrant.
  4. Add the ground lamb to the pot and cook until browned, breaking it apart with a spatula, approximately 5-7 minutes.
  5. Stir in the rinsed lentils and rice, followed by the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes until the rice and lentils are tender and the liquid is absorbed.
  6. Remove from heat and let it sit covered for an additional 5 minutes.
  7. Fluff the rice and lentil mixture with a fork, garnish with chopped parsley, and serve warm.
