- Brown rice - 1 cup
- Green lentils - 1/2 cup
- Ground lamb - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken broth - 2 cups
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice and green lentils under cold water until the water runs clear; set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, cinnamon, salt, and black pepper to the pot, stirring for 1 minute until fragrant.
- Add the ground lamb to the pot and cook until browned, breaking it apart with a spatula, approximately 5-7 minutes.
- Stir in the rinsed lentils and rice, followed by the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes until the rice and lentils are tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice and lentil mixture with a fork, garnish with chopped parsley, and serve warm.
