Ingredients

  • Basmati rice - 100 grams
  • Lentils (green or brown) - 50 grams
  • Lamb shoulder, diced - 200 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic cloves, minced - 2
  • Cumin powder - 1 teaspoon
  • Allspice powder - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon (to taste)
  • Olive oil - 2 tablespoons
  • Water - 500 milliliters
  • Fresh parsley, chopped - 2 tablespoons (for garnish)

Steps

  1. Rinse the basmati rice and soak it in water for 30 minutes, then drain.
  2. In a pot, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, allspice, black pepper, and salt to the onions, and sauté for an additional 2 minutes until fragrant.
  4. Add the diced lamb to the pot and cook until browned on all sides, about 8-10 minutes.
  5. Stir in the lentils and add 500 milliliters of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 25 minutes.
  6. After 25 minutes, add the soaked and drained rice to the pot, stir gently, and adjust the seasoning if necessary.
  7. Cover the pot and cook on low heat for an additional 15-20 minutes, or until the rice and lentils are tender and the water is absorbed.
  8. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and garnish with chopped parsley before serving.
