Ingredients

  • Brown rice - 100 grams
  • Green lentils - 75 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground lamb - 200 grams
  • Parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Rinse the brown rice and lentils under cold water until the water runs clear.
  2. In a medium saucepan, combine the brown rice, green lentils, and 500 ml of water. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes or until the rice and lentils are tender. Drain any excess water if necessary.
  3. While the rice and lentils are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic, cumin, cinnamon, salt, and black pepper to the skillet. Cook for another 2 minutes until fragrant.
  5. In a bowl, combine the ground lamb with the onion and spice mixture, parsley, and lemon juice. Mix well and form into small kebabs or patties.
  6. In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the kebabs and cook for about 3-4 minutes on each side, or until fully cooked and browned.
  7. Serve the rice and lentil mixture on plates topped with the kebabs. Garnish with additional parsley if desired.
