- Brown rice - 100 grams
- Green lentils - 75 grams
- Water - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground lamb - 200 grams
- Parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a medium saucepan, combine the brown rice, green lentils, and 500 ml of water. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes or until the rice and lentils are tender. Drain any excess water if necessary.
- While the rice and lentils are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic, cumin, cinnamon, salt, and black pepper to the skillet. Cook for another 2 minutes until fragrant.
- In a bowl, combine the ground lamb with the onion and spice mixture, parsley, and lemon juice. Mix well and form into small kebabs or patties.
- In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the kebabs and cook for about 3-4 minutes on each side, or until fully cooked and browned.
- Serve the rice and lentil mixture on plates topped with the kebabs. Garnish with additional parsley if desired.
