  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 600 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown rice and green lentils under cold water until the water runs clear.
  2. In a large pot, heat the olive oil over medium heat and add the diced onion. Sauté until the onion is translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Add the chicken thighs to the pot and brown them on both sides for about 5 minutes.

  8. Remove the chicken thighs, shred the meat, and mix it back into the rice and lentils.
