- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 600 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the brown rice and green lentils under cold water until the water runs clear.
- In a large pot, heat the olive oil over medium heat and add the diced onion. Sauté until the onion is translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Add the chicken thighs to the pot and brown them on both sides for about 5 minutes.
- Stir in the cumin, cinnamon, salt, and black pepper, ensuring the chicken is well coated with the spices.
- Add the rinsed lentils and brown rice to the pot, followed by the water.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice and lentils are tender and the liquid has been absorbed.
- Remove the chicken thighs, shred the meat, and mix it back into the rice and lentils.
