Riz Bil Adas

Ingredients

  • Brown lentils - 100 grams
  • Long-grain rice - 150 grams
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley - a handful, chopped (for garnish)

Steps

  1. Rinse the brown lentils under cold water and place them in a pot with 300 ml of vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until tender. Drain and set aside.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10-12 minutes. Add minced garlic and sauté for another minute.
  3. Add the cumin, coriander, paprika, salt, and black pepper to the caramelized onions, stirring well to combine.
  4. In the same saucepan, add the rinsed rice and mix well with the spices and onions. Pour in the remaining 200 ml of vegetable broth. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
  5. Once the rice is cooked, gently fold in the cooked lentils. Drizzle with the remaining tablespoon of olive oil, and mix until everything is well combined.
  6. Serve hot, garnished with fresh chopped parsley.
