Riz Bil Adas

Ingredients
- Brown lentils - 100 grams
- Long-grain rice - 150 grams
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Fresh parsley - a handful, chopped (for garnish)
Steps
- Rinse the brown lentils under cold water and place them in a pot with 300 ml of vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until tender. Drain and set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10-12 minutes. Add minced garlic and sauté for another minute.
- Add the cumin, coriander, paprika, salt, and black pepper to the caramelized onions, stirring well to combine.
- In the same saucepan, add the rinsed rice and mix well with the spices and onions. Pour in the remaining 200 ml of vegetable broth. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, gently fold in the cooked lentils. Drizzle with the remaining tablespoon of olive oil, and mix until everything is well combined.
- Serve hot, garnished with fresh chopped parsley.
