- Brown lentils - 100 grams
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges
Steps
- Rinse the brown lentils under cold water and soak them in water for about 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Drain the lentils and add them to the saucepan, along with the cumin, cinnamon, salt, and black pepper, stirring well to combine.
- Pour in the vegetable broth and bring to a boil, then reduce the heat and simmer for 15 minutes until the lentils are tender.
- Stir in the basmati rice, cover the saucepan, and cook for another 15 minutes or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- Serve warm, garnished with chopped parsley and lemon wedges on the side.
