- Water - 400 milliliters
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, bring 400 milliliters of water to a boil. Add the soaked rice and a pinch of salt. Cover and reduce the heat to low, cooking for about 15-18 minutes until the rice is tender and water is absorbed.
- While the rice is cooking, prepare the tabbouleh by combining the finely chopped parsley, mint, diced tomato, cucumber, and red onion in a bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
- Once the rice is cooked, fluff it with a fork and let it cool slightly before combining it with the tabbouleh mixture.
- Drizzle the dressing over the rice and tabbouleh, mixing gently to combine all ingredients.
