Ingredients

  • Long-grain rice - 150 grams
  • Fresh parsley - 50 grams, finely chopped

  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Water - 400 milliliters

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, bring 400 milliliters of water to a boil. Add the soaked rice and a pinch of salt. Cover and reduce the heat to low, cooking for about 15-18 minutes until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the tabbouleh by combining the finely chopped parsley, mint, diced tomato, cucumber, and red onion in a bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
  5. Once the rice is cooked, fluff it with a fork and let it cool slightly before combining it with the tabbouleh mixture.
  6. Drizzle the dressing over the rice and tabbouleh, mixing gently to combine all ingredients.
