Ingredients

  • Basmati rice - 150 grams
  • Fresh spinach - 200 grams
  • Onion - 1 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 300 milliliters

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cumin to the pot, stirring for about 1 minute until fragrant.
  4. Drain the soaked rice and add it to the pot, stirring to coat the rice with the onion and garlic mixture.
  5. Pour in 300 milliliters of water, add salt and black pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes until the rice is cooked and the water is absorbed.
  7. While the rice is cooking, wash the fresh spinach thoroughly and chop it coarsely.
  8. In a separate pan, lightly sauté the chopped spinach in a small amount of olive oil until wilted, about 3-4 minutes.
  9. Once the rice is done, fluff it with a fork and gently fold in the sautéed spinach and lemon juice.
  10. Serve warm, garnished with additional lemon wedges if desired.
