Ingredients
- Basmati rice - 150 grams
- Fresh spinach - 200 grams
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 300 milliliters
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cumin to the pot, stirring for about 1 minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the onion and garlic mixture.
- Pour in 300 milliliters of water, add salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes until the rice is cooked and the water is absorbed.
- While the rice is cooking, wash the fresh spinach thoroughly and chop it coarsely.
- In a separate pan, lightly sauté the chopped spinach in a small amount of olive oil until wilted, about 3-4 minutes.
- Once the rice is done, fluff it with a fork and gently fold in the sautéed spinach and lemon juice.
- Serve warm, garnished with additional lemon wedges if desired.
