Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Olive oil - 2 tablespoons (30ml)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, bell pepper, and zucchini. Cook for an additional 5 minutes until the vegetables are slightly softened.
  4. Add the soaked and drained rice to the saucepan, stirring well to combine with the vegetables.
  5. Pour in the water, then add cinnamon, allspice, salt, and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and water is absorbed.
  7. Remove from heat and let it sit covered for another 5 minutes to steam.
  8. Fluff the rice with a fork, garnish with chopped parsley, and serve warm.
