Ingredients

  • Basmati rice - 150 grams
  • Ground lamb - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken broth - 300 ml
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and ground lamb to the skillet. Cook until the lamb is browned, breaking it apart with a spatula, about 7-10 minutes.
  4. Stir in the cinnamon, allspice, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
  5. Drain the soaked rice and add it to the skillet with the lamb mixture. Stir well to combine.
  6. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 20 minutes until the rice is cooked and the liquid is absorbed.
  7. Once cooked, fluff the rice with a fork, then sprinkle the toasted pine nuts and chopped parsley on top before serving.
