- Basmati rice - 150 grams
- Ground lamb - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken broth - 300 ml
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and ground lamb to the skillet. Cook until the lamb is browned, breaking it apart with a spatula, about 7-10 minutes.
- Stir in the cinnamon, allspice, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
- Drain the soaked rice and add it to the skillet with the lamb mixture. Stir well to combine.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 20 minutes until the rice is cooked and the liquid is absorbed.
- Once cooked, fluff the rice with a fork, then sprinkle the toasted pine nuts and chopped parsley on top before serving.
