Ingredients

  • Long-grain rice - 100 grams
  • Plain yogurt - 200 grams
  • Water - 500 milliliters
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mint leaves - 1 tablespoon, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Rinse the rice under cold water until the water runs clear to remove excess starch, then drain.
  2. In a medium saucepan, combine the rinsed rice, water, olive oil, and salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
  4. In a separate bowl, mix the plain yogurt with black pepper and half of the chopped mint leaves. Stir well and set aside.
  5. Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork, then gently fold in the yogurt mixture until well combined.
  7. Serve the Riz bi Laban warm, garnished with toasted pine nuts and the remaining mint leaves.
