Ingredients
- Long-grain rice - 100 grams
- Plain yogurt - 200 grams
- Water - 500 milliliters
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Mint leaves - 1 tablespoon, chopped
- Pine nuts - 2 tablespoons, toasted
Steps
- Rinse the rice under cold water until the water runs clear to remove excess starch, then drain.
- In a medium saucepan, combine the rinsed rice, water, olive oil, and salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
- In a separate bowl, mix the plain yogurt with black pepper and half of the chopped mint leaves. Stir well and set aside.
- Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then gently fold in the yogurt mixture until well combined.
- Serve the Riz bi Laban warm, garnished with toasted pine nuts and the remaining mint leaves.
