Ingredients

  • Jasmine rice - 100 grams
  • Water - 400 ml
  • Plain yogurt (preferably whole milk) - 200 grams
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Pine nuts - 30 grams
  • Fresh mint leaves - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover the pan, and simmer for about 15 minutes or until the rice is tender and the water is absorbed.
  4. While the rice is cooking, heat the olive oil in a small skillet over medium heat. Add the pine nuts and toast them until golden brown, stirring frequently to prevent burning.
  5. In a bowl, mix the cooked rice with the yogurt, black pepper, and cinnamon powder until well combined.
  6. Serve the rice mixture warm, topped with the toasted pine nuts and garnished with fresh mint leaves.
