- Jasmine rice - 100 grams
- Water - 400 ml
- Plain yogurt (preferably whole milk) - 200 grams
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Cinnamon powder - 1/4 teaspoon
- Pine nuts - 30 grams
- Fresh mint leaves - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the pan, and simmer for about 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat the olive oil in a small skillet over medium heat. Add the pine nuts and toast them until golden brown, stirring frequently to prevent burning.
- In a bowl, mix the cooked rice with the yogurt, black pepper, and cinnamon powder until well combined.
- Serve the rice mixture warm, topped with the toasted pine nuts and garnished with fresh mint leaves.
