- Basmati rice - 150 grams
- Zucchini - 2 medium-sized, finely chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 400 ml
- Cinnamon powder - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a medium pot, heat the olive oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
- Add the minced garlic and chopped zucchini to the pot, and cook for another 5 minutes until the zucchini softens.
- Stir in the soaked rice, cinnamon powder, allspice, salt, and black pepper, cooking for 2 minutes to toast the rice slightly.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
