Ingredients

  • Jasmine rice - 150 grams
  • Chicken thighs (boneless, skinless) - 300 grams
  • Zucchini - 2 medium-sized (about 300 grams)
  • Onion - 1 medium (about 150 grams)
  • Garlic - 2 cloves
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cinnamon - 1/2 teaspoon
  • Ground allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (for garnish) - a handful

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. While the rice is soaking, heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and diced chicken thighs to the pan, cooking until the chicken is browned on all sides, around 7-10 minutes.
  4. Stir in the ground cinnamon and allspice, mixing well, then season with salt and pepper to taste.
  5. Slice the zucchini into half-moons and add them to the pan, cooking for another 5 minutes until slightly softened.
  6. Drain the soaked rice and add it to the pan, stirring to combine all ingredients.
  7. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it simmer for 20 minutes, or until the rice is cooked and has absorbed all the liquid.
  8. Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes. Serve warm, garnished with fresh parsley.
