- Jasmine rice - 150 grams
- Chicken thighs (boneless, skinless) - 300 grams
- Zucchini - 2 medium-sized (about 300 grams)
- Onion - 1 medium (about 150 grams)
- Garlic - 2 cloves
- Chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cinnamon - 1/2 teaspoon
- Ground allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (for garnish) - a handful
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- While the rice is soaking, heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and diced chicken thighs to the pan, cooking until the chicken is browned on all sides, around 7-10 minutes.
- Stir in the ground cinnamon and allspice, mixing well, then season with salt and pepper to taste.
- Slice the zucchini into half-moons and add them to the pan, cooking for another 5 minutes until slightly softened.
- Drain the soaked rice and add it to the pan, stirring to combine all ingredients.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it simmer for 20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes. Serve warm, garnished with fresh parsley.
