- Long-grain rice - 150 grams
- Zucchini - 2 medium (about 300 grams)
- Ground lamb or beef - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 400 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- While the rice is soaking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and ground meat to the skillet, cooking until the meat is browned, about 7-10 minutes. Drain excess fat if necessary.
- Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes to combine the flavors.
- Remove the meat mixture from the skillet and set aside. In the same skillet, add the zucchini, sliced into rounds, and sauté for about 5 minutes until slightly softened.
- Drain the soaked rice and add it to the skillet with the zucchini. Stir to mix well.
- Pour in the water, bring to a boil, cover, and then reduce the heat to low. Cook for about 20 minutes or until the rice is tender and the water is absorbed.
- Once cooked, fluff the rice with a fork and mix in the meat mixture. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
