Ingredients

  • Long-grain rice - 150 grams
  • Zucchini - 2 medium (about 300 grams)
  • Ground lamb or beef - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 400 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. While the rice is soaking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and ground meat to the skillet, cooking until the meat is browned, about 7-10 minutes. Drain excess fat if necessary.
  4. Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes to combine the flavors.
  5. Remove the meat mixture from the skillet and set aside. In the same skillet, add the zucchini, sliced into rounds, and sauté for about 5 minutes until slightly softened.
  6. Drain the soaked rice and add it to the skillet with the zucchini. Stir to mix well.
  7. Pour in the water, bring to a boil, cover, and then reduce the heat to low. Cook for about 20 minutes or until the rice is tender and the water is absorbed.
  8. Once cooked, fluff the rice with a fork and mix in the meat mixture. Adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
