Ingredients
- Zucchini - 4 medium-sized
- Long-grain rice - 1 cup (200g)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable broth - 2 cups (500ml)
- Olive oil - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Wash and slice the tops off the zucchinis, then hollow them out using a small spoon, being careful not to break the skin.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced tomato to the skillet, cooking for an additional 3-4 minutes until the tomatoes soften.
- Stir in the rice, cinnamon, allspice, salt, and black pepper, mixing well to combine. Cook for another 2 minutes to toast the rice lightly.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and liquid is absorbed.
- Remove the skillet from heat and stir in the chopped parsley. Allow the mixture to cool slightly before stuffing it into the hollowed zucchinis.
- Preheat the oven to 180°C (350°F). Arrange the stuffed zucchinis in a baking dish, and if desired, drizzle with a little extra olive oil.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the zucchinis are tender.
- Serve warm and enjoy!
