Ingredients

  • Zucchini - 4 medium-sized
  • Long-grain rice - 1 cup (200g)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 2 cups (500ml)
  • Olive oil - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash and slice the tops off the zucchinis, then hollow them out using a small spoon, being careful not to break the skin.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced tomato to the skillet, cooking for an additional 3-4 minutes until the tomatoes soften.
  4. Stir in the rice, cinnamon, allspice, salt, and black pepper, mixing well to combine. Cook for another 2 minutes to toast the rice lightly.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and liquid is absorbed.
  6. Remove the skillet from heat and stir in the chopped parsley. Allow the mixture to cool slightly before stuffing it into the hollowed zucchinis.
  7. Preheat the oven to 180°C (350°F). Arrange the stuffed zucchinis in a baking dish, and if desired, drizzle with a little extra olive oil.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the zucchinis are tender.
  9. Serve warm and enjoy!
