Ingredients
- Basmati rice - 150 grams
- Lamb shoulder, cut into cubes - 300 grams
- Onion, finely chopped - 1 medium
- Garlic cloves, minced - 2
- Cinnamon stick - 1
- Allspice berries - 5
- Cardamom pods - 3
- Bay leaf - 1
- Chicken or vegetable broth - 500 milliliters
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Add the lamb cubes to the pot and brown on all sides for about 8-10 minutes.
- Stir in the cinnamon stick, allspice berries, cardamom pods, bay leaf, salt, and black pepper, and mix well.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to low, cover, and let simmer for 30 minutes until the lamb is tender.
- After 30 minutes, remove the lamb pieces and set aside. Strain the broth, discarding the spices, and return the strained broth to the pot.
- Add the soaked and drained rice to the pot with the broth. Bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes until the rice is fluffy and all the liquid is absorbed.
- Once done, fluff the rice with a fork and gently fold in the lamb pieces. Let it sit for 5 minutes before serving.
- Garnish with chopped fresh parsley and serve warm.
