Riz Bi Kharouf

Ingredients
- Lamb shoulder - 300 grams, cut into cubes
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 ml
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the cubed lamb, cinnamon stick, allspice, salt, and black pepper. Brown the lamb on all sides for about 5-7 minutes.
- Pour in the water and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 25 minutes until the lamb is tender.
- While the lamb is cooking, rinse the basmati rice under cold water until the water runs clear. Drain well.
- Once the lamb is tender, remove the cinnamon stick and add the rinsed rice to the pot. Stir to combine.
- Cover the pot and cook on low heat for another 15 minutes, or until the rice is fully cooked and has absorbed the liquid.
- Remove from heat and let the pot sit covered for another 5 minutes. Fluff the rice with a fork before serving.
- Serve the rice on plates, topped with the lamb and garnished with freshly chopped parsley.
