Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon stick - 1
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 ml
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the cubed lamb, cinnamon stick, allspice, salt, and black pepper. Brown the lamb on all sides for about 5-7 minutes.
  4. Pour in the water and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 25 minutes until the lamb is tender.
  5. While the lamb is cooking, rinse the basmati rice under cold water until the water runs clear. Drain well.
  6. Once the lamb is tender, remove the cinnamon stick and add the rinsed rice to the pot. Stir to combine.
  7. Cover the pot and cook on low heat for another 15 minutes, or until the rice is fully cooked and has absorbed the liquid.
  8. Remove from heat and let the pot sit covered for another 5 minutes. Fluff the rice with a fork before serving.
  9. Serve the rice on plates, topped with the lamb and garnished with freshly chopped parsley.
