Ingredients
- Basmati rice - 1 cup (200g)
- Ground beef or lamb - 250g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tomato - 1 medium, diced
- Chicken or vegetable broth - 2 cups (500ml)
- Lemon - 1, juiced
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Add the ground meat to the skillet and cook until browned, breaking it apart with a wooden spoon, about 7-10 minutes.
- Season the meat mixture with cinnamon, allspice, salt, and black pepper. Stir in the diced tomato and cook for another 2-3 minutes until softened.
- Remove the skillet from heat and mix in the chopped parsley and lemon juice. Set aside.
- In a separate pot, heat the remaining tablespoon of olive oil over medium heat. Drain the soaked rice and add it to the pot, toasting for 2-3 minutes.
- Pour the chicken or vegetable broth into the pot with the rice and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.
- Fluff the rice with a fork and serve topped with the kefta mixture.
