- Basmati rice - 150g
- Ground beef or lamb - 200g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Cinnamon powder - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken or vegetable broth - 300ml
- Pine nuts - 30g, toasted
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
- Increase the heat to medium-high and add the ground beef or lamb. Cook until browned, breaking it up with a spatula, about 5-7 minutes.
- Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant. Remove from heat and set aside.
- In a separate pot, heat the remaining tablespoon of olive oil over medium heat. Drain the soaked rice and add it to the pot, stirring to coat it with oil for about 2 minutes.
- Pour in the chicken or vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
- Remove the rice from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
- To serve, place a generous portion of rice on each plate, top with the spiced meat mixture, and garnish with toasted pine nuts and fresh parsley.
