Ingredients

  • Basmati rice - 150g
  • Ground beef or lamb - 200g
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Cinnamon powder - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken or vegetable broth - 300ml
  • Pine nuts - 30g, toasted
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
  4. Increase the heat to medium-high and add the ground beef or lamb. Cook until browned, breaking it up with a spatula, about 5-7 minutes.
  5. Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant. Remove from heat and set aside.
  6. In a separate pot, heat the remaining tablespoon of olive oil over medium heat. Drain the soaked rice and add it to the pot, stirring to coat it with oil for about 2 minutes.
  7. Pour in the chicken or vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
  8. Remove the rice from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
  9. To serve, place a generous portion of rice on each plate, top with the spiced meat mixture, and garnish with toasted pine nuts and fresh parsley.
