Ingredients

  • Short-grain rice - 50 grams
  • Milk - 500 milliliters
  • Sugar - 50 grams
  • Cornstarch - 15 grams
  • Rose water - 1 tablespoon
  • Orange blossom water - 1 tablespoon
  • Salt - a pinch
  • Chopped pistachios - 20 grams
  • Ground cinnamon - 1/2 teaspoon

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for about 30 minutes.
  2. In a pot, combine the soaked rice with 500 milliliters of milk and a pinch of salt. Bring to a gentle boil over medium heat, stirring occasionally.
  3. Once boiling, reduce the heat to low and let it simmer for about 15 minutes, stirring frequently to prevent sticking.
  4. In a small bowl, mix the cornstarch with a few tablespoons of cold milk until dissolved, then add this mixture to the pot.
  5. Stir in the sugar, rose water, and orange blossom water, and continue to cook for another 5-10 minutes until the mixture thickens to a creamy consistency.
  6. Remove from heat and let it cool slightly before transferring to serving bowls.
  7. Chill in the refrigerator for at least 1 hour before serving.
  8. Before serving, garnish with chopped pistachios and a sprinkle of ground cinnamon.
