- Basmati rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Olive oil - 2 tablespoons (30ml)
- Ground cumin - 1 teaspoon (2g)
- Salt - 1 teaspoon (6g)
- Black pepper - 1/2 teaspoon (1g)
- Chicken breast, diced - 200g
- Onion, finely chopped - 1 medium (100g)
- Pine nuts - 30g
- Almonds, sliced - 30g
- Fresh parsley, chopped - 2 tablespoons (8g)
- Lemon juice - 1 tablespoon (15ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced chicken to the saucepan and cook until browned and cooked through, about 7-10 minutes. Stir in the ground cumin, salt, and black pepper.
- Remove the chicken and onion mixture from the saucepan and set aside. In the same saucepan, add the soaked rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
- While the rice cooks, in a small skillet, heat the remaining tablespoon of olive oil. Add the pine nuts and sliced almonds, toasting until golden brown, about 3-4 minutes. Stir frequently to prevent burning.
- Once the rice is cooked, fluff it with a fork and gently mix in the chicken mixture. Drizzle with lemon juice and sprinkle with chopped parsley.
- Serve the rice topped with the toasted pine nuts and almonds.
