Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Olive oil - 2 tablespoons (30ml)
  • Ground cumin - 1 teaspoon (2g)
  • Salt - 1 teaspoon (6g)
  • Black pepper - 1/2 teaspoon (1g)
  • Chicken breast, diced - 200g
  • Onion, finely chopped - 1 medium (100g)
  • Pine nuts - 30g
  • Almonds, sliced - 30g
  • Fresh parsley, chopped - 2 tablespoons (8g)
  • Lemon juice - 1 tablespoon (15ml)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced chicken to the saucepan and cook until browned and cooked through, about 7-10 minutes. Stir in the ground cumin, salt, and black pepper.
  4. Remove the chicken and onion mixture from the saucepan and set aside. In the same saucepan, add the soaked rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
  5. While the rice cooks, in a small skillet, heat the remaining tablespoon of olive oil. Add the pine nuts and sliced almonds, toasting until golden brown, about 3-4 minutes. Stir frequently to prevent burning.
  6. Once the rice is cooked, fluff it with a fork and gently mix in the chicken mixture. Drizzle with lemon juice and sprinkle with chopped parsley.
  7. Serve the rice topped with the toasted pine nuts and almonds.
