Ingredients

  • Cauliflower - 1 medium head, grated
  • Chicken thighs, boneless and skinless - 300 grams, cut into bite-sized pieces
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the chicken pieces to the skillet. Season with salt, black pepper, cinnamon, and allspice. Cook until the chicken is browned on all sides, about 7-10 minutes.
  4. Pour in the chicken broth and bring to a simmer. Reduce heat to low, cover the skillet, and let it cook for 10 minutes until the chicken is fully cooked and tender.
  5. Meanwhile, in a separate pan, lightly sauté the grated cauliflower in a little olive oil for about 5 minutes until tender but still slightly crunchy.
  6. Once the chicken is cooked, serve it over the sautéed cauliflower rice. Garnish with fresh chopped parsley before serving.
