Riz Bi Adas

Ingredients

  • Brown lentils - 100 grams
  • Jasmine rice - 150 grams
  • Onion - 1 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 500 milliliters
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and place them in a pot with 300ml of vegetable broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until tender. Drain any excess liquid.
  2. In a separate pot, rinse the jasmine rice under cold water until the water runs clear. Add the rice to the remaining 200ml of vegetable broth, bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes until the rice is fluffy and the liquid is absorbed.
  3. While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the sliced onions and cook until they are golden brown and caramelized, about 10-12 minutes, stirring occasionally.
  4. Add minced garlic, cumin, salt, and black pepper to the skillet with the onions. Cook for an additional 2 minutes, stirring to combine.
  5. In a large bowl, combine the cooked lentils and rice. Mix in the caramelized onion mixture and drizzle with lemon juice. Adjust seasoning to taste.
  6. Serve warm, garnished with fresh parsley.
