Riz Bi Adas

Ingredients
- Brown lentils - 100 grams
- Jasmine rice - 150 grams
- Onion - 1 medium, thinly sliced
- Olive oil - 3 tablespoons
- Vegetable broth - 500 milliliters
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and place them in a pot with 300ml of vegetable broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until tender. Drain any excess liquid.
- In a separate pot, rinse the jasmine rice under cold water until the water runs clear. Add the rice to the remaining 200ml of vegetable broth, bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes until the rice is fluffy and the liquid is absorbed.
- While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the sliced onions and cook until they are golden brown and caramelized, about 10-12 minutes, stirring occasionally.
- Add minced garlic, cumin, salt, and black pepper to the skillet with the onions. Cook for an additional 2 minutes, stirring to combine.
- In a large bowl, combine the cooked lentils and rice. Mix in the caramelized onion mixture and drizzle with lemon juice. Adjust seasoning to taste.
- Serve warm, garnished with fresh parsley.
