Ingredients

  • Short-grain rice - 100 grams
  • Whole milk - 500 ml
  • Granulated sugar - 50 grams
  • Vanilla extract - 1 teaspoon
  • Orange blossom water - 1 tablespoon
  • Cinnamon powder - 1 teaspoon (for garnish)
  • Chopped pistachios - 20 grams (for garnish)

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
  2. In a saucepan, combine the rinsed rice and 500 ml of whole milk. Bring to a gentle simmer over medium heat, stirring occasionally.
  3. Once the mixture comes to a simmer, reduce the heat to low and cook for about 20-25 minutes, stirring frequently to prevent sticking, until the rice is tender and the mixture thickens.
  4. Add the granulated sugar, vanilla extract, and orange blossom water to the rice mixture. Stir well and cook for an additional 5 minutes to allow the flavors to meld.
  5. Remove the saucepan from heat and let the Riz au Lait cool for a few minutes.
  6. Spoon the mixture into serving bowls, and let it cool to room temperature or refrigerate for a chilled version.
  7. Before serving, sprinkle with cinnamon powder and garnish with chopped pistachios.
