- Short-grain rice - 100 grams
- Whole milk - 500 ml
- Granulated sugar - 50 grams
- Vanilla extract - 1 teaspoon
- Orange blossom water - 1 tablespoon
- Cinnamon powder - 1 teaspoon (for garnish)
- Chopped pistachios - 20 grams (for garnish)
Steps
- Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
- In a saucepan, combine the rinsed rice and 500 ml of whole milk. Bring to a gentle simmer over medium heat, stirring occasionally.
- Once the mixture comes to a simmer, reduce the heat to low and cook for about 20-25 minutes, stirring frequently to prevent sticking, until the rice is tender and the mixture thickens.
- Add the granulated sugar, vanilla extract, and orange blossom water to the rice mixture. Stir well and cook for an additional 5 minutes to allow the flavors to meld.
- Remove the saucepan from heat and let the Riz au Lait cool for a few minutes.
- Spoon the mixture into serving bowls, and let it cool to room temperature or refrigerate for a chilled version.
- Before serving, sprinkle with cinnamon powder and garnish with chopped pistachios.
