Ingredients

  • Basmati rice - 150 grams
  • Pomegranate seeds - 100 grams
  • Vegetable broth - 300 ml
  • Onion - 1 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Cinnamon stick - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
  3. Add the rinsed rice to the pan and stir for about 2 minutes, allowing the rice to lightly toast.
  4. Pour in the vegetable broth, then add the cinnamon stick, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
  6. Remove from heat and let the rice sit covered for an additional 5 minutes.
  7. Fluff the rice with a fork and remove the cinnamon stick. Gently fold in the pomegranate seeds, chopped parsley, and lemon juice.
  8. Serve warm, garnished with extra pomegranate seeds and parsley if desired.
