- Vegetable broth - 300 ml
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Cinnamon stick - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
- Add the rinsed rice to the pan and stir for about 2 minutes, allowing the rice to lightly toast.
- Pour in the vegetable broth, then add the cinnamon stick, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
- Remove from heat and let the rice sit covered for an additional 5 minutes.
- Fluff the rice with a fork and remove the cinnamon stick. Gently fold in the pomegranate seeds, chopped parsley, and lemon juice.
- Serve warm, garnished with extra pomegranate seeds and parsley if desired.
