- Brown or green lentils - 100 grams
- Long-grain rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 400 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Rinse the lentils under cold water and soak them for 15 minutes.
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Drain the lentils and add them to the pot with the sautéed onion and garlic. Stir in the cumin, allspice, salt, and black pepper.
- Pour in the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes.
- While the lentils are cooking, rinse the rice under cold water until the water runs clear. Once the lentils are tender, add the rinsed rice to the pot.
- Stir gently, cover, and cook on low heat for another 15 minutes until the rice is fluffy and all liquid is absorbed.
- Remove from heat and let it rest for 5 minutes before fluffing with a fork.
- Serve warm, garnished with fresh parsley and lemon wedges on the side.
