Ingredients

  • All-purpose flour - 100 grams
  • Semolina - 25 grams
  • Baking powder - 1 teaspoon
  • Sugar - 1 tablespoon
  • Salt - a pinch
  • Water - 300 milliliters
  • Ground walnuts - 50 grams
  • Ground cinnamon - 1/2 teaspoon
  • Maple syrup - 2 tablespoons
  • Powdered sugar - for dusting
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour, semolina, baking powder, sugar, and salt.
  2. Gradually add the water to the dry ingredients while whisking until you have a smooth batter.
  3. Heat a non-stick skillet over medium heat and pour small rounds of batter (about 1/4 cup each) onto the skillet.
  4. Cook for about 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until lightly golden.
  5. In a separate bowl, mix the ground walnuts, ground cinnamon, and maple syrup to create the filling.
  6. Take one pancake, place a spoonful of the walnut mixture in the center, and fold it in half to create a half-moon shape, sealing the edges gently.
  7. Heat a little vegetable oil in the skillet and fry the filled pancakes for about 1-2 minutes on each side until golden brown.
  8. Remove from the skillet, dust with powdered sugar, and serve warm.
