Ingredients

  • Water - 300 milliliters
  • Vegetable oil - for frying
  • Chopped walnuts - 50 grams
  • Ground cinnamon - 1/2 teaspoon
  • Sugar (for filling) - 1 tablespoon
  • Simple syrup - for drizzling

Steps

  1. In a mixing bowl, combine the all-purpose flour, semolina, baking powder, sugar, and salt.
  2. Gradually add water to the dry ingredients while whisking until you achieve a smooth batter.
  3. Heat a non-stick skillet over medium heat. Pour a small ladle of batter onto the skillet, forming a small pancake (about 10 cm in diameter). Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes.
  4. Flip the pancake and cook for an additional 1-2 minutes until lightly golden. Remove from the skillet and cover with a clean kitchen towel to keep warm. Repeat with the remaining batter.
  5. In a small bowl, mix the chopped walnuts, ground cinnamon, and sugar to create the filling.
  6. Take one pancake and place a spoonful of the walnut mixture in the center. Fold the pancake in half and pinch the edges to seal tightly. Repeat with the remaining pancakes.
  7. In a separate skillet, heat vegetable oil over medium heat. Fry the stuffed pancakes until golden brown and crispy, about 2-3 minutes per side.
  8. Remove the pancakes from the oil and drain on paper towels. Drizzle with simple syrup before serving.
