Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Ground lamb or beef - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 30 grams
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 5 grams (for meat mixture)
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - a handful, chopped
  • Tomato - 1 medium, sliced
  • Bell pepper - 1/2, sliced
  • Pine nuts - 20 grams, toasted
  • Lemon wedges - for serving

Steps

  1. In a small bowl, combine warm water and active dry yeast; let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix all-purpose flour, salt, and olive oil. Gradually add the yeast mixture, stirring until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
  4. While the dough is rising, heat a skillet over medium heat. Add the ground meat, chopped onion, and minced garlic; cook until the meat is browned.
  5. Stir in tomato paste, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 5 minutes, then remove from heat and mix in chopped parsley.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and roll it out into two thin circles (about 25 cm in diameter).
  8. Transfer the dough circles onto a baking sheet lined with parchment paper.
  9. Spread the meat mixture evenly over the dough, then top with sliced tomatoes, bell peppers, and toasted pine nuts.
  10. Bake in the preheated oven for 12-15 minutes until the crust is golden and the toppings are cooked.
  11. Remove from the oven and let cool for a few minutes before slicing. Serve with lemon wedges.
