- Fava beans (canned or cooked) - 400 g
- Garlic - 2 cloves, minced

- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pita bread - 2 pieces
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
Steps
- If using dried fava beans, soak them overnight and cook until tender. If using canned fava beans, rinse and drain them.
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the fava beans, cumin, salt, black pepper, and lemon juice to the saucepan. Stir well and cook for about 5-7 minutes, mashing some of the beans with a fork to create a creamy texture.
- While the beans are cooking, warm the pita bread in a dry skillet or wrap them in foil and place in a preheated oven for about 5 minutes.
- Once the fava bean mixture is ready, remove it from heat and stir in the chopped parsley.
- To serve, split the warm pita bread and fill each with the fava bean mixture. Top with diced tomatoes and cucumbers, and drizzle with the remaining olive oil.
