Ingredients

  • Whole wheat pita bread - 2 pieces
  • Olive oil - 2 tablespoons
  • Hummus - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 small, thinly sliced
  • Spinach - 50 grams, fresh
  • Red onion - 1 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Za'atar spice blend - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the whole wheat pita breads on a baking sheet lined with parchment paper.
  3. Brush the tops of the pita breads with olive oil using a pastry brush.
  4. Spread a layer of hummus evenly over each pita bread.
  5. Arrange the cherry tomatoes, red bell pepper, zucchini, spinach, and red onion on top of the hummus.
  6. Sprinkle the za'atar spice blend, salt, and black pepper over the vegetables.
  7. Bake in the preheated oven for 15-20 minutes, or until the vegetables are tender and the pita is crispy.
  8. Remove from the oven and garnish with chopped fresh parsley before serving.
