Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Za'atar spice blend - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Additional olive oil for brushing - 1 tablespoon

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Preheat the oven to 250°C (482°F) and place a baking stone or an inverted baking sheet inside to heat.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and then flatten into circles about 0.5 cm thick.
  7. Carefully transfer the flattened dough onto the preheated baking stone or sheet. Bake for about 5-7 minutes until puffed and lightly golden.
  8. While the pita is baking, mix za'atar and sesame seeds in a small bowl. Once the pita is out of the oven, brush with olive oil and sprinkle the za'atar mixture generously on top.
  9. Serve warm with additional olive oil for dipping.
