- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Za'atar spice blend - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Additional olive oil for brushing - 1 tablespoon
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat the oven to 250°C (482°F) and place a baking stone or an inverted baking sheet inside to heat.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and then flatten into circles about 0.5 cm thick.
- Carefully transfer the flattened dough onto the preheated baking stone or sheet. Bake for about 5-7 minutes until puffed and lightly golden.
- While the pita is baking, mix za'atar and sesame seeds in a small bowl. Once the pita is out of the oven, brush with olive oil and sprinkle the za'atar mixture generously on top.
- Serve warm with additional olive oil for dipping.
