Ingredients

  • Pistachios - 100 grams
  • Honey - 2 tablespoons
  • Greek yogurt - 150 grams
  • Coconut milk - 100 ml
  • Vanilla extract - 1 teaspoon
  • Gelatin powder - 1 teaspoon
  • Water - 2 tablespoons

Steps

  1. Soak the pistachios in water for 2 hours, then drain and blend them into a fine paste.
  2. In a small bowl, dissolve the gelatin in 2 tablespoons of water and let it sit for 5 minutes.
  3. In a saucepan, heat the coconut milk until warm but not boiling, then stir in the dissolved gelatin until fully melted.
  4. In a mixing bowl, combine the pistachio paste, Greek yogurt, honey, and vanilla extract. Mix until smooth.
  5. Slowly pour the warm coconut milk mixture into the pistachio mixture, stirring continuously until well combined.
  6. Divide the mousse mixture into two serving cups and refrigerate for at least 2 hours until set.
  7. Garnish with crushed pistachios before serving.
