Ingredients
- All-purpose flour - 150 grams
- Semolina - 50 grams
- Unsalted butter - 100 grams, softened
- Powdered sugar - 50 grams
- Water - 3 tablespoons
- Rose water - 1 tablespoon
- Ground pistachios - 100 grams
- Granulated sugar - 2 tablespoons
- Ground cinnamon - 1/2 teaspoon
- Salt - a pinch
Steps
- In a mixing bowl, combine the all-purpose flour, semolina, and salt.
- Add the softened butter and mix until the mixture resembles coarse crumbs.
- In a separate bowl, mix the powdered sugar, rose water, and water until well combined.
- Gradually add the sugar mixture to the flour mixture, kneading until a dough forms.
- Cover the dough with plastic wrap and let it rest for 30 minutes.
- While the dough rests, prepare the filling by mixing the ground pistachios, granulated sugar, and ground cinnamon in a bowl.
- Preheat the oven to 180°C (350°F).
- Divide the rested dough into small balls (about the size of a walnut).
- Flatten each ball into a disc, place a teaspoon of the pistachio filling in the center, and fold the dough over to seal it.
- Shape the filled dough into a ball again and place it on a baking sheet lined with parchment paper.
- Using a maamoul mold or a fork, gently press the top of each cookie to create a pattern.
- Bake in the preheated oven for 15-20 minutes or until lightly golden.
- Let the maamoul cool on a wire rack before serving.
