Ingredients

  • All-purpose flour - 150 grams
  • Semolina - 50 grams
  • Unsalted butter - 100 grams, softened
  • Powdered sugar - 50 grams
  • Water - 3 tablespoons
  • Rose water - 1 tablespoon
  • Ground pistachios - 100 grams
  • Granulated sugar - 2 tablespoons
  • Ground cinnamon - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. In a mixing bowl, combine the all-purpose flour, semolina, and salt.
  2. Add the softened butter and mix until the mixture resembles coarse crumbs.
  3. In a separate bowl, mix the powdered sugar, rose water, and water until well combined.
  4. Gradually add the sugar mixture to the flour mixture, kneading until a dough forms.
  5. Cover the dough with plastic wrap and let it rest for 30 minutes.
  6. While the dough rests, prepare the filling by mixing the ground pistachios, granulated sugar, and ground cinnamon in a bowl.
  7. Preheat the oven to 180°C (350°F).
  8. Divide the rested dough into small balls (about the size of a walnut).
  9. Flatten each ball into a disc, place a teaspoon of the pistachio filling in the center, and fold the dough over to seal it.
  10. Shape the filled dough into a ball again and place it on a baking sheet lined with parchment paper.
  11. Using a maamoul mold or a fork, gently press the top of each cookie to create a pattern.
  12. Bake in the preheated oven for 15-20 minutes or until lightly golden.
  13. Let the maamoul cool on a wire rack before serving.
