- Chicken breast - 300 grams, cubed
- Fresh pineapple - 200 grams, cubed
- Red bell pepper - 1 medium, cut into squares
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large bowl, combine the cubed chicken, olive oil, garlic powder, ground cumin, paprika, salt, black pepper, and lemon juice. Mix well to ensure the chicken is evenly coated. Cover and marinate for at least 15 minutes.
- While the chicken is marinating, soak wooden skewers in water for about 10 minutes to prevent burning on the grill.
- After marinating, thread the chicken, pineapple, and red bell pepper onto the skewers, alternating between the ingredients.
- Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let the kebabs rest for a couple of minutes. Garnish with fresh parsley before serving.
