Ingredients
- Chicken breasts - 2 (200g each)
- Pine nuts - 50g
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
Steps
- Preheat the grill or BBQ to medium-high heat.
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent.
- Add the pine nuts to the skillet and toast them lightly until golden brown, stirring frequently to avoid burning.
- Remove from heat and stir in the chopped parsley, ground cumin, salt, and black pepper. Allow the mixture to cool slightly.
- Make a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the pine nut mixture, securing the openings with toothpicks if necessary.
- Brush the outside of the chicken breasts with the remaining tablespoon of olive oil and drizzle with lemon juice.
- Place the stuffed chicken breasts on the grill or BBQ and cook for about 6-8 minutes per side, or until the internal temperature reaches 75°C (165°F).
- Remove the chicken from the grill and let it rest for a few minutes before serving.
