Ingredients

  • Chicken breasts - 2 (200g each)
  • Pine nuts - 50g
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon

Steps

  1. Preheat the grill or BBQ to medium-high heat.
  2. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent.
  3. Add the pine nuts to the skillet and toast them lightly until golden brown, stirring frequently to avoid burning.
  4. Remove from heat and stir in the chopped parsley, ground cumin, salt, and black pepper. Allow the mixture to cool slightly.
  5. Make a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  6. Stuff each chicken breast with the pine nut mixture, securing the openings with toothpicks if necessary.
  7. Brush the outside of the chicken breasts with the remaining tablespoon of olive oil and drizzle with lemon juice.
  8. Place the stuffed chicken breasts on the grill or BBQ and cook for about 6-8 minutes per side, or until the internal temperature reaches 75°C (165°F).
  9. Remove the chicken from the grill and let it rest for a few minutes before serving.
