- Red onion - 1 small (about 50 grams)
- Pine nuts - 30 grams
- Olive oil - 2 tablespoons (30 ml)
- Lemon juice - 1 tablespoon (15 ml)
- Salt - 1/4 teaspoon (1.5 grams)
- Black pepper - 1/4 teaspoon (1 gram)
Steps
- Toast the pine nuts in a dry skillet over medium heat for about 3-4 minutes until golden brown, stirring frequently. Remove from heat and let cool.
- Finely chop the parsley and mint, and add them to a large mixing bowl.
- Halve the cherry tomatoes and add them to the bowl.
- Dice the cucumber and finely chop the red onion, then add both to the mixing bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
- Pour the dressing over the salad ingredients and toss gently to combine.
