- Basmati rice - 150 grams
- Pine nuts - 30 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Water - 300 milliliters
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cinnamon - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
- Add the minced garlic and pine nuts to the onions and cook until the pine nuts are golden brown, stirring frequently to prevent burning, about 2-3 minutes.
- Drain the soaked rice and add it to the saucepan, stirring well to combine with the onion, garlic, and pine nuts.
- Pour in the water, and add salt, black pepper, and cinnamon. Stir to combine all ingredients.
- Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Serve warm, garnished with fresh parsley.
