Ingredients

  • Basmati rice - 150 grams
  • Pine nuts - 30 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Water - 300 milliliters
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
  3. Add the minced garlic and pine nuts to the onions and cook until the pine nuts are golden brown, stirring frequently to prevent burning, about 2-3 minutes.
  4. Drain the soaked rice and add it to the saucepan, stirring well to combine with the onion, garlic, and pine nuts.
  5. Pour in the water, and add salt, black pepper, and cinnamon. Stir to combine all ingredients.
  6. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Serve warm, garnished with fresh parsley.
