- Ground lamb - 400 grams
- Pine nuts - 50 grams, lightly toasted
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon, for cooking
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons (for tahini sauce)
- Pita bread - 2 pieces, for serving
- Fresh vegetables (lettuce, tomato, cucumber) - as desired, for serving
Steps
- In a large bowl, combine the ground lamb, toasted pine nuts, chopped onion, minced garlic, parsley, mint, cumin, cinnamon, salt, and black pepper. Mix until well combined.
- Divide the lamb mixture into two equal portions and shape them into patties, about 2.5 cm thick.
- Heat olive oil in a skillet over medium heat. Once hot, add the lamb patties and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.
- While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
- Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
- To serve, place each lamb burger in a pita pocket, drizzle with tahini sauce, and add fresh vegetables as desired.
