Ingredients

  • Ground lamb - 400 grams
  • Pine nuts - 50 grams, lightly toasted

  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon, for cooking
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons (for tahini sauce)
  • Pita bread - 2 pieces, for serving
  • Fresh vegetables (lettuce, tomato, cucumber) - as desired, for serving

Steps

  1. In a large bowl, combine the ground lamb, toasted pine nuts, chopped onion, minced garlic, parsley, mint, cumin, cinnamon, salt, and black pepper. Mix until well combined.
  2. Divide the lamb mixture into two equal portions and shape them into patties, about 2.5 cm thick.
  3. Heat olive oil in a skillet over medium heat. Once hot, add the lamb patties and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.
  4. While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
  5. Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
  6. To serve, place each lamb burger in a pita pocket, drizzle with tahini sauce, and add fresh vegetables as desired.
