Ingredients

  • Chickpeas - 200 grams, cooked and drained
  • Pine nuts - 50 grams, lightly toasted
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat flour - 2 tablespoons
  • Olive oil - 2 tablespoons, for cooking
  • Pita bread - 2, for serving
  • Tomato - 1, sliced, for serving
  • Cucumber - 1 small, sliced, for serving
  • Tahini sauce - 2 tablespoons, for drizzling

Steps

  1. In a food processor, combine the cooked chickpeas, toasted pine nuts, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Transfer the mixture to a bowl and stir in the whole wheat flour until well incorporated. If the mixture is too wet, add a little more flour.
  3. Form the mixture into two burger patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, prepare the pita by warming them in a dry pan or oven.
  6. Once cooked, assemble the burgers by placing each patty inside a pita and topping with sliced tomatoes, cucumbers, and a drizzle of tahini sauce. Serve immediately.
