Ingredients

  • Zucchini - 2 medium (about 300 grams), sliced
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Feta cheese (optional) - 50 grams, crumbled

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced zucchini to the skillet. Cook for 5-7 minutes, stirring occasionally, until the zucchini is tender.
  4. Stir in the diced tomato, cumin powder, salt, and black pepper. Cook for another 3-4 minutes until the tomatoes soften.
  5. Add the cooked pasta to the skillet and toss everything together. Drizzle with lemon juice and mix well.
