Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Olive oil - 3 tablespoons
  • Zaatar spice blend - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Parmesan cheese (grated) - 30 grams (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the garlic oil.
  4. Add the zaatar spice blend, lemon juice, and reserved pasta water to the skillet. Toss everything together gently until the pasta is well coated.
  5. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes on low heat to combine the flavors.
  6. Remove from heat and stir in the chopped parsley. If desired, sprinkle grated Parmesan cheese on top before serving.
