Ingredients

  • Whole wheat pasta - 150 grams
  • Plain Greek yogurt - 200 grams
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Fresh mint leaves - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30 grams, toasted

Steps

  1. Bring a pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, in a bowl, mix the Greek yogurt, minced garlic, lemon juice, olive oil, chopped mint, salt, and black pepper until well combined.
  3. Once the pasta is cooked, drain it and return it to the pot. Allow it to cool for a minute, then add the yogurt mixture to the pasta, tossing until the pasta is evenly coated.
