  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Tomatoes (fresh, diced) - 400 grams
  • Tomato paste - 2 tablespoons
  • Bell pepper (diced) - 1 medium
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  3. Add the minced garlic and diced bell pepper to the skillet. Cook for an additional 3-4 minutes until the bell pepper softens.
  4. Stir in the diced tomatoes and tomato paste, mixing well. Season with dried oregano, dried basil, salt, and black pepper. Let the sauce simmer for about 10 minutes, stirring occasionally.
  5. Once the sauce has thickened, add the cooked pasta to the skillet. Toss everything together to ensure the pasta is well coated with the sauce.
  6. Remove from heat and stir in the fresh parsley and lemon juice before serving.
