- Whole wheat pasta - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ripe tomatoes - 300 grams, diced
- Fresh basil leaves - 1/2 cup, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the diced tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.
- Season the tomato mixture with salt and black pepper, then stir in the chopped fresh basil.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained pasta to the skillet with the tomato and basil mixture, tossing well to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- Serve hot, topped with grated Parmesan cheese if desired.
